2 1/4 cups self rising flour
1 1/2 cups sugar
1 1/2 cups finely shredded carrots
2 tsp. vanilla
2 tsp. cinnamon
1 tsp. salt
1 1/3 cups cooking oil
3 eggs
1 1/2 cups pineapple (with syrup)

Cream together sugar,vanilla,oil and eggs. Beat well. In a seperate bowl mix flour,cinnamon and salt. Add flour mixture, beat thoroughly. Add pineapple,carrots and nuts. Mix together. Bake at 350 degrees for about 35 minutes in a greased and floured long ckae pan.
